Roasted Okra


  • 1 lb of whole okra
  • 1 Tbs olive oil
  • Spices of your choice (Ex. Cumin, paprika, cayenne)
  • Salt and pepper



Preheat the oven to 400 degrees F. Rinse and dry the okra. Coat the spears in olive oil and sprinkle on the spices (if using), salt, and pepper. Toss the okra to distribute the spices. Spread the spears on a sheet pan being careful to avoid overcrowding. Roast in the oven turning every now and then until lightly browned (~15 minutes).
