Slow Cooker Taco Soup

Ingredients: 1 lb. cooked and chopped meat of choice (chicken breasts, lean ground beef, or ground turkey)

1, 28 ounce can crushed tomatoes 2 cups frozen corn

1, 15 oz. can black beans (lower sodium) 1, 15 oz. can kidney beans (lower sodium)

1 envelope Ranch seasoning mix 2 Tbsp.

Taco seasoning 1 small onion, chopped

1/2 teaspoon kosher salt

1/4 teaspoon garlic powder

2 eggs, lightly beaten

 

Directions:

1. Place all ingredients in a slow cooker, and cook on low for 4-6 hours.

2. Garnish with low-fat sour cream or plain Greek yogurt
